Italian Cities: Modena - Tigella


Guess who's back? It's me, with more foods from Italian cities. Happy New Year!

These versatile little bread flats from Modena can be filled with ham, cheese, salami or even chocolate spread. Another nice lunch idea for me and JD. I won't be making them the traditional way cooked between tiles which gave them their name but I will be trying the chocolate version!

Ingredients:

500g flour
200 ml warm water
100 ml warm milk
25g melted butter
7g yeast
pinch salt
fillings of your choice


Put the flour, yeast and salt in a bowl.


Add the melted butter.


Add the warm water and milk then mix to form a dough.


Knead for 10 minutes then leave covered to rise for an hour.


After the hour, roll out the dough and use something roughly 3 inches across to cut out circles.


Place the circles on a greased tray and leave another 30 minutes to rest.


Bake for 10 minutes at 180 C until they've started to brown.


Slice open and fill with whatever you like. I chose peppered salami, cheddar slices and mustard plus a couple of chocolate spread filled ones too.




These were great, we really enjoyed them. Quite easy to make and such a lovely lunch. The still warm bread melted the cheese a bit and each mouthful was a soft, warm delight. I'd recommend these to anyone wanting a slightly different lunch idea. Delicious!
