These caramalised bananas on sticks are a popular street food in the Philippines. Usually made using Saba bananas, I've had to make do with the ones we can get here. A simple recipe which gives you a delicious sweet snack.
Ingredients:
1 cup oil
1/2 cup brown sugar
6 bananas
6 wooden skewers
Heat the oil on a medium heat until it is hot.
Add the brown sugar and stir as it starts to caramelise. Next, put in a couple of bananas at a time and let them fry in the sugary oil. Turn them over after a couple of minutes and continue to fry.
Remove with a slotted spoon onto some kitchen paper to drain.
Push a skewer inside each banana and eat while still warm.
They're not the most appetising looking sweet snack but they more than make up for that in flavour. Soft, warm, caramelised sugar covering each banana giving it a lovely toffee taste. Only Val and I like bananas in our house so we got these to ourselves. I've read that Saba bananas are firmer in texture so I was worried my bananas might break up in the oil but they held together well. Just long enough for us to devour them at least! Yum 😊
