USA: Virginia - Turkey Casserole

 


This Turkey Casserole from the state of Virginia looks like a tasty, warming dish and exactly the sort of meal JD and I will enjoy. I hope that turns out to be true!


Ingredients:

1 tablespoon oil

1 onion

1 bell pepper

500g minced turkey

1 cup frozen corn

1 cup milk

1 can chopped tomatoes

1/2 cup cornmeal 

2 teaspoons garlic granules

2 tablespoons chilli powder

1 cup grated cheese


Chop the onion and saute in the oil.

Chop the bell pepper and add to the pan. I used two small peppers instead of one large one.


As the vegetables start to soften, add the turkey mince and cook until done.

Add the corn, milk and tomatoes and stir well.

Next, add the cornmeal, chilli powder and garlic granules. Stir again and tip into a greased oven dish.


Cover with foil and bake in the oven at 175 C for 45 minutes.


Take off the foil and bake for another 20 minutes, adding the cheese to the top for the last 5 minutes.





We enjoyed this casserole and JD said it was much like casseroles he'd had in America. It was a nice thick consistency with lots of texture from the vegetables. The cornmeal had thickened up the milk to make a nice creamy sauce throughout. I'd reduced the amount of chilli powder as we've been stung in the past by too-spicy dishes and this one turned out nicely spicy but not too much. Hurrah!  Overall it was a simple but hearty dish that we polished off in no time!
