USA: Kentucky - Spoonbread

 


Reading the Wikipedia article for Spoonbread, I read that it's more like a pudding than a bread 'such as Yorkshire Pudding'. !!?! It's nothing like Yorkshire pudding! It's like a creamier cornbread with sweetcorn. It's also very popular in Kentucky where they hold a Spoonbread Festival every year.


Ingredients:

2 eggs

1 can creamed corn

1 can corn

4 tablespoons butter, melted

1 cup sour cream

1/2 cup milk

salt & pepper

125g cornmeal

125g flour

1 teaspoon baking powder

2 tablespoons sugar


I couldn't get a can of creamed corn (do we even get that in the UK?) so I used my stick blender to blitz a can of corn. I mixed the eggs into this corn.

Add the regular corn, butter, sour cream, milk, salt & pepper. Mix in well.

Next, fold in the cornmeal, flour, baking powder and sugar.

Tip this mixture into a greased oven dish.

Bake at 190 C for 35 to 40 minutes until a toothpick comes out clean.



We enjoyed the spoonbread. It was creamy inside and had a nice crisp crust on the outside. Very much like cornbread with sweetcorn which is a lovely combination. It would go great with something like baked beans to add some moisture to the meal. I would have it again as it's easy to make and a great side dish which can be prepared in advance.
