USA: Louisiana - Red Beans & Rice

 


It feels a bit of a cheat to call this red beans and rice when there's ham and sausage in there too! But originally it was just red beans with pork bones slow cooked, the recipe has evolved over the years to include actual meat. I'm not complaining because this dish looks amazing either way. It was traditionally a Monday meal because most women washed on a Monday so they could leave a pot of beans cooking while they got on with laundry. It's such a simple recipe to make, I love it!

Ingredients:

2 cans kidney beans
200g ham joint
4 chicken sausages
1 green pepper
1 onion
2 celery sticks
2 cloves garlic
1 tablespoon hot sauce
1 1/2 teaspoons salt
1 cup rice

Literally just put everything (not the rice, you maniac!) in the slow cooker. Chop the onion, pepper and celery. Mince the garlic. Put 350ml of boiling water on top and put the lid on. 


Cook on HIGH for 8 hours. About halfway through I cubed the ham and sliced the sausages, gave the beans a stir and put the lid back on. Serve with the boiled rice.


I was right, it was amazing! Such a simple recipe but very tasty. The saltiness of the ham was lovely with the creamy, soft beans. It was a nice thick sauce which I'd helped along by adding a bit of tomato puree at the end. JD and I thoroughly enjoyed this meal and had seconds. So easy to prepare but it felt like such a treat to eat. I've always wanted to visit New Orleans and frankly, this makes it much more appealing!
