USA: Alaska - Mixed Berry Cobbler

 


Alaska was a tough one to find a recipe I could make. Lots of their favourite foods were difficult to find ingredients for. But apparently Alaska is abundant in berries in the summer months and they love a mixed berry cobbler.


Ingredients:

750g mixed berries (I used frozen summer berries)

1/2 cup sugar

1/4 cup cornflour


For the cobbler:

2 cups flour

1/2 cup sugar

3 teaspoons baking powder

1/2 teaspoon salt

1/4 teaspoon cinnamon

1 cup buttermilk

6 tablespoons butter, melted

1 teaspoon vanilla essence


For the top:

2 tablespoons sugar

1/4 teaspoon cinnamon


Set your oven to 190 C to pre-heat. Mix together the berries, sugar, cornflour and salt in an oven-proof dish. Mix well and leave for 15 minutes while the oven heats.



Cook the berries for 20 minutes and while that's going on you can make the cobbler. Put the flour, sugar, baking powder, salt and cinnamon in a mixing bowl and mix.


Add in the butter, buttermilk and vanilla then stir well to combine.



Mix together the sugar and cinnamon in a small bowl so you have it ready for the top.


The berries should come out of the oven softened and in a thick sauce.


Dollop tablespoons of the cobbler mix on top of the berries. It'll spread out as it cooks. Sprinkle the cinnamon sugar on top of that and put back in the oven for 15-20 minutes


When it comes out of the oven it'll be like molten lava so rest for 10-15 minutes before eating it. We had ours with ice cream, but whipped cream or custard would be nice too.




The cobbler topping was lovely and melted in my mouth giving a cinnamony flavour as it went. The berries were glossy and smothered in the thick sauce which was soaked into the cobbler too. Overall it was very nice and a simple dessert to make.
