USA: Rhode Island - Johnny Cakes

 


As well as being the nickname of a Sopranos character, Johnny Cakes are cornmeal 'pancakes' eaten with maple syrup. They seem like great breakfast food so we're going to eat them with some bacon. They are said to have originated in Rhode Island as far back as 1739.


Ingredients:

1 cup cornmeal

1 cup boiling water

1 teaspoon salt

1 teaspoon sugar

1/2 cup milk

maple syrup, to serve


Mix the cornmeal, water, salt and sugar in a bowl or jug then leave for 10 minutes.



Add the milk a bit at a time until you reach the consistency of mashed potatoes. Melt a tablespoon of butter in a pan and spoon in the batter to make small round discs about 3 inches wide.

Fry on each side for a few minutes until they are firmer. You can cook them for longer if you want them browner but it's down to personal preference. We had ours with bacon and maple syrup.

JD and I really enjoyed these. They were crispy around the edges but soft in the middle. The maple syrup was soaked up really well to give them a sweeter taste along with the saltiness of them. They'd make a great breakfast and I love how simple they are to make and cook. Winner!
