USA: Texas - Sheet Cake

This dessert  has been popular since 1957 when the Dallas Morning News printed the recipe. It's a nice simple dessert but one we've never tried before so we're all looking forward to having it.

Ingredients:

2 cups flour

2 cups sugar

1 teaspoon baking powder

1 teaspoon salt

1 cup butter

1 cup water

1/3 cup cocoa

1 cup sour cream

2 eggs

1 teaspoon vanilla essence

Frosting:

1/2 cup butter (melted)

1/3 cup milk

1/4 cup cocoa

1lb icing sugar

1 tablespoon vanilla essence

Pecans to serve

Mix the flour, sugar, baking powder and salt in a bowl.

In a pan melt the butter adding the water and cocoa too. Mix well then bring to the boil and remove from heat.

Add the pan contents to the flour mix. Also add the eggs, sour cream and vanilla. Whisk this well and then pour into a greased flat oven tray with high sides.

Bake in the oven at 175 C for 20-22 minutes. It's done when the sides start to pull away from the sides of the tray.

While the cake is baking you can make the frosting. It's as simple as mixing all the ingredients together and stirring until smooth. As soon as the cake comes out of the oven pour over the frosting and smooth it over the corners to spread over the entire cake. Leave the cake to come to room temperature.

Place the pecans on top to serve.

This cake was a dream to make, so easy! And it's delicious. It's moist from the addition of sour cream and kind of fudgy in texture. The frosting melts on top of the warm cake to form a perfect second skin. We all really enjoyed it with a scoop of vanilla ice cream.
