These pork rolls from New Jersey look like just the thing JD and I will enjoy for a lunch. Of course in NJ they use a local cured ham in their rolls so I've had to substitute some chopped pork roll for ours. Let's see how they are!
Ingredients:
4 English muffins
4 eggs
4 slices chopped pork roll
4 slices cheese
Salt & Pepper
Melt some butter in a frying pan and fry the chopped pork slices.
In another pan fry some eggs, sprinkle with salt & pepper as they cook.
Slice open and butter the muffins ready for the filling. When the pork roll is starting to brown, place it on the muffin bottom. It fits so perfectly, very pleasing!
Add a slice of cheese on top.
Top with the eggs and put the muffin tops on. You've got yourself some NJ Pork Rolls!
I'd left the egg yolks soft and the yolks burst out all over the muffins making for a very moist mouthful of food. It was amazing! The cheese melted slightly and was the perfect taste and texture to compliment everything else. Saltiness from the pork went well with the smooth egg whites. It was seriously tasty. I can see us having these again maybe as a weekend breakfast. Yum!
