Zambia - Goulabjamoun

These sweet potato fritters are eaten as a dessert in Zambia. Made with coconut milk to cook the sweet potato it makes them extra creamy before they're fried to crisp the outsides. Sounds delicious!

Ingredients:

2-3 sweet potatoes
1 cup coconut milk
1/4 cup sugar
1/4 cup flour
1 teaspoon cinnamon

Start by putting the coconut milk in a pan with the sugar. As it heats up stir so the sugar dissolves in the milk.



Peel and dice the sweet potatoes. The smaller you cut them, the quicker they'll soften. Put them in with the milk and cook for 15 minutes.


After about 10 minutes you can start mashing the potatoes as they cook which will speed things up.


Add the flour and cinnamon and stir well to combine everything.



Heat up some oil in a frying pan and fry spoonfuls of the mixture. 2-3 minutes on each side until they're browned and firmer.


We served them with ice cream!


I expected these would be delicious. We've had sweet potato pie before so we're used to eating sweet potatoes in a dessert way. But, these just didn't grab me. I did over fry mine a bit so maybe that was the problem but they just didn't taste sweet enough. They were nicer with the ice cream on but maybe a drop of honey would help them out. A bit of a disappointing one!
