France - Pipérade

Pipérade is named from piper, the Basque word for pepper. It can be served in many ways as a main or side dish but is most popular with eggs. We love eggs so we had this for lunch alongside an omelette.


Ingredients:

2 onions

2 peppers

2 tablespoons oil

2 garlic cloves

1 can chopped tomatoes

1/4 teasppon smoked paprika mixed with a dash of cayenne pepper

Salt & pepper

 

 

Slice the onions and peppers thinly. Saute them in the oil until softened.


 

Mince the garlic and add to the pan along with the tomatoes and spices. Continue to cook stirring well until the tomato liquid has thickened.



Season the dish with salt & pepper. Quickly whip up an omlette to go with it and you're done!




We really enjoyed this meal. The Pipérade was nicely spicy from the paprika and cayenne. It was different to have a lot of vegetables with our eggs as we often add meat to our breakfasts. It would be great as a side to meat or fish but we would eat it again on it's own too. Tres bonne!
