Gambia - Plasas

Gambia is a small country on the west coast of Africa, in fact it is the smallest country on mainland Africa. This spinach stew seems unusual to me because it contains both meat and fish. I'm up for trying it now the memory of the tofu has faded a bit. :)

Ingredients:

500g braising steak
500g smoked fish
1 package frozen spinach
1 onion
2 cups water
3/4 cup oil
Crushed chillis
1/4 cup smooth peanut butter


Chop up the steak and onion.


Put in a pan with the water. Add a pinch of salt and 1/2 teaspoon of cruched chillis. Bring to the boil. Simmer for  20 minutes.

 Add the oil and (thawed) spinach. Simmer for a further hour.


 Flake the fish and add it to the stew.


 Stir in the peanut butter and simmer for a final 10 minutes.



This stew was surprisingly delicious if not a bit oily. The taste of the fish, steak and spinach combined was fantastic, really tasty. It's not something you could eat a lot of due to the oil content but a bowl of it is very filling. A lot of the oil was absorbed by the spinach. I didn't think I'd enjoy a fish/steak stew but I was wrong, it was great and both of us loved it. I'll no longer shy away from a meat/fish combo. Well done Gambia! :)
