Antigua - Fungie

Fungie is a cornmeal dish sometimes made with okra and served with saltfish and stews in the Carribbean.

Ingredients:

Cornmeal
Water
Pepper


 Put everything in a pan and stir until the cornmeal is cooked and comes away from the sides of the pan. The cornmeal is quite thick and stiff to stir by then.


Melt some butter. Swish it around a small bowl and fill with the fungie. Turn out onto a plate.



It was really good. It was the same texture as mashed potato. I can see it going really well with lots of meals we already have. I feel curious how it'd be with stew like they eat it in Antigua. It would be better with a gravy or sauce as it was almost a bit dry on it's own. The taste was nice, quite peppery but creamy too. JD said it was similar to grits so he enjoyed it. I can see us trying it again.
