Laos - Larb

Larb was created by the Lao people and is basically a meat salad. Almost made entirely of meat in fact. How fantastic!


* olive oil
* minced turkey
* 3 shallots
* 1 stalk of lemongrass
* 1 lime
* 3 tbls of soy sauce
* 1 tbls hot sauce
* 2 kaffir lime leaves
* chopped mint and coriander
* crushed peanuts

Heat some oil in a pan and add the minced turkey. Cook until browned.

Add the chopped shallots and lemongrass. Continue to cook until they're soft.

Remove from the heat. When the meat has cooled a bit add all the other ingredients except the peanuts.

Mix and put in a bowl.

Top with the crushed peanuts and eat. Larb is usually served lukewarm or cold.

I really enjoyed this dish. The lime made it taste light and fresh. Peanuts on top added a nice crunchiness to it. It was quick and easy to make. Perfect for summer.
