El Salvador - Red Bean and Cheese Pupusas

These look delicious and come with a variety of fillings including meat. I picked these red bean and cheese ones to try.

Ingredients:

* red kidney beans
* 1 onion
* 2 garlic cloves
* 2 tbls olive oil
* pinch of salt
* grated cheese
* 2 cups of water
* 3 cups of corn masa mix



Cook the beans, onion and garlic in 1 spoon of the oil until soft.



Puree the mix in a blender with half a cup of water.



Put the puree back in a pan with the rest of the oil and cook until it reduces into a thick paste.



Mix the water and corn masa mix together.



It's a messy job!



Eventually it'll form a dough.



Grate some cheese.



Take a small ball of dough and form it into a disc. Put a spoon of puree onto it.



Add some cheese.



Add another disc on top and press down the sides to seal it.



Melt a bit of butter or oil in a pan and cook the pupusa on both sides for a few minutes each



When finished it'll look like this.



Eat while still warm.



Really delicious. The filling is so tasty. I ate four of these and they're very stodgy in a lovely comforting way. I'm definitely going to make them again and try some different fillings.
