Bolivia - Silpancho

I'm looking forward to trying this Bolivian dish, it looks delicious!

Ingredients:

* 1 thin cut beef steak
* 1 egg
* 1 cup of rice
* 2-3 potatoes
* salt and pepper
* 1 onion
* 1-2 tomatoes
* oil for frying
* 1 cup of breadcrumbs



First, the rice and potatoes need to cook in some water. I put both in the same pan and took out the potatoes when they are almost done.



Take the steak, sprinkle with salt and pepper and then pound it with a meat mallet or if like me you haven't got one just use a rolling pin. When it's flat coat it in breadcrumbs on either side and set aside.



Slice up the potatoes and fry until browned in a tablespoon of oil. Drain on kitchen paper.



Next, fry the steak on both sides until done and set aside.



Fry an egg, drain the rice then chop the tomato and onion and you're ready to assemble the dish.

Place the rice on a plate. Put the steak on top and then the fried egg on top of that. Place the potatoes around the rice and sprinkle some chopped onion and tomato on top of it all.



I love how this dish looks plated up, really appetising. The ingredients all go well together. It seemed kind of breakfasty to me but it'd be good for any meal. Filling and really tasty.
