Luxembourg - Gromperekichelcher

That's potato fritters to us!


* 1 kg potatoes
* 3 onions
* 2 shallots
* parsley
* 4-6 eggs
* 2 tablespoons flour
* salt
* pepper
* oil for frying

Peel and grate the potatoes. They need drying to get rid of the excess moisture, I used kitchen paper to dry them. Put the potato in a bowl and add the chopped onions, shallots, parsley, eggs, salt and pepper.

Mix together and form into small patties. Press into the flour to coat them and then fry them in the oil.

When browned on both sides, take out of the oil and place on kitchen paper. Serve and eat with something to dip them in, like tomato ketchup, barbecue sauce etc.

They were really good. They'd make a great side dish to most meats. I'd definitely do them again because they were so easy to make.
