These little pastry parcels look lovely and I'm looking forward to trying them. They're a popular street food in Catania and I think they'll make a nice lunch for me and JD.
Ingredients:
1 package puff pastry
1 onion
1 tomato (or 4 cherry ones)
1 ball mozzarella
1 teaspoon dried basil
pinch of salt
pinch of sugar
Slice the onion and saute in a little oil.
Cut the puff pastry into two 15cm squares.
Put half the onion mixture into the centre of each square. Add a couple of pieces of the mozzarella ball on top.
Bring the four corners together in the middle and pinch the dough to seal the tart.
Bake in the oven at 160 C for 20 minutes until golden brown.
We really enjoyed them! The onions had caramelised due to the pinch of sugar and the warm, soft tomatoes were a lovely addition too. The melted mozzarella and basil gave it pizza-like taste. A very nice, hot lunch which was welcome on a freezing cold day like today!
