Turkey - Islak Burgers

These 'wet burgers' sold in Istanbul are very popular street food fare especially late at night. I love a good burger so I'm looking forward to trying these!


Ingredients:

500g beef mince
1.5 teaspoons paprika
1.5 teaspoons garlic granules
2 tablespoons dried parsley
5 tablespoons butter
1/4 cup tomato paste
4 brioche buns
1 tablespoon oil
Salt & Pepper


First we make the burger mix. Put the mince, parsley and 1 teaspoon each of the paprika and garlic granules. Using your hands mix it well until it's combined.


Next we have to make the tomato sauce. Melt 4 tablespoons of butter in a pan.


When it's melted keep on cooking until it starts to caramalise. Then add the tomato puree and the remainder of the spices. Whisk as it cooks to incorporate the puree into the butter.


When it starts to bubble like in the picture above, add 3/4 cup of water and continue to whisk until a smooth sauce.


Melt the last tablespoon of butter in a frying pan and toast the brioche buns until golden.


Form the burger mix into 4 patties and cook them in a frying pan using the tablespoon of oil.



While they are cooking take the toasted brioche buns and place them in an oven-proof dish. Brush on some of the sauce to the top of the bun bottom.


When the burgers are cooked as you like them, dunk them in the tomato sauce so they are covered all over and place on the burger buns.


Cover with the top part of the burger bun and then brush more tomato sauce on top of the whole burger. 



Cover with foil and cook for 5 minutes at 200 C.



Serve immediately and enjoy!



Ooh I enjoyed this one! The tomato sauce was delicious on it's own. I had a sneaky teaspoon of it as it was cooking. Just to check seasonings you understand. Combined with the burger it made the most moistly meaty burger I've ever eaten. The brioche buns being toasted meant the sauciness of the burger didn't break up the bun. It all held together really well to eat. It was messy though, it's not called a wet burger for nothing! This may be my alltime favourite burger now. Hats off to Turkey!
