Italian Cities: Florence - Gelato

 


Some say Gelato (Italian for 'Frozen') was invented in Florence by Bernado Buontalenti, but even if it's not the birthplace of this frozen treat, it's still a very popular food there. It's not really the weather for gelato at the moment but that didn't stop me from making some a few days ago!

Ingredients:

4 egg yolks

150g sugar

350 ml whole milk

250ml double cream

Something to flavour your gelato. Vanilla etc.



Put the sugar and egg yolks in a bowl then whisk them for 5 minutes with an electric whisk.


Put the milk in a small saucepan and heat it for 5 minutes. It needs to be warm but don't let it boil.



Put the egg yolk/ sugar mixture you whisked earlier into a medium saucepan over a medium heat. Pour the warmed milk into this medium pan, stirring as you do so. This is the time to add any flavouring you'd like. I chose to add some lime zest.


Now gently heat the medium pan for 5 minutes. Don't let it boil!


Take off the heat and stir in the cream. Pour into a tub and place in the freezer.


Every 30 minutes for the next 5 hours you need to whisk the mixture for 30 seconds to stop ice crystals forming in your gelato.


It took a lot longer for mine to set. More like 8 hours, but eventually it did.




It was smooth and creamy, just like other gelato I've had. The lime flavour was subtle but a really nice tangy taste that contrasted with the creaminess of it. I'm pleased it eventually worked out but it was a long time whisking it religiously! Still, good things come to those that wait (and whisk) so all's well that ends well etc. 😀
