Italian Cities: Parma - Prosciutto Sandwich


I've had sandwiches similar to this before but I'm looking forward to having this one too. Prosciutto is from Parma and is a protected designation of origin. I bought ready roasted peppers and artichoke hearts in jars for convenience. You could choose whichever antipasto you prefer for this sandwich.

Ingredients:

2 ciabatta rolls
150g prosciutto
200g of your chosen antipasto
2-3 tablespoons green pesto
125g mozzarella
2 tablespoons olive oil

Heat the oil in a frying pan. Split the rolls in half and place in the hot oil inside down until the edges are crisped.



Next, spread the pesto on the bottom of each roll.


Drain and slice the mozzarella and lay it on top of the pesto. I also added a little salt & pepper here.


Warm your chosen antipasto in the frying pan and then add it to the sandwich.


Top with the prosciutto.


Top with the roll... erm top and you're done!


I love pesto but usually have red pesto so it was lovely to have green pesto this time. The flavours all went really well together. The vegetables were soft and tasty. The only problem with the sandwich was the mozzarella being a bit wet which made it a bit most but that would be easily solved by drying it beforehand. It was a lovely lunch and we'd have it again.
