Named after Shakespeare's heroine from Romeo & Juliet which is set in Verona. These small sandwiched biscuits are made light by the addition of some ground almonds and made sweet with a chocolate filling. Cute!
Ingredients:
Makes 18 kisses
226g butter
1/3 cup icing sugar
1/4 teaspoon salt
1 teaspoon vanilla essence
1 2/3 cup flour
1/3 cup cocoa
1/2 cup ground almonds
100g chocolate spread
Cream the butter and sugar in a bowl then stir in the salt and vanilla. Add the flour, cocoa and ground almonds to the bowl.
Mix until just combined.
Roll the mixture into small balls and place on a lined baking tray. My mixture made 36 balls which will make 18 kisses.
Bake in the oven at 175 C for 10 minutes. Then leave to cool. Add a teaspoon of chocolate spread as filling to each pair of biscuits. I served mine in some petit four cases.
Juliet's kisses are very crumbly but we enjoyed them anyway. Nice, light and just a couple of bites for each one. Easy to make and they make a cute dessert. Lovely with a glass of milk along side too. Called Baci di Giulietta in Italian, they are sometimes served with Romeo's kisses which are vanilla biscuits with the chocolate filling. Very nice!
