It was tricky to find a recipe from Washington as a lot of their favourite foods seem to be crab and fish based recipes. But then I found this popular food from fairs such as the Puyallup and Fisher Fairs. They sell up to 80,000 of these scones a day so they must be damn good!
Ingredients:
2 1/2 cups flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
6 tablespoons vegetable shortening
3/4 cup full fat milk
Put all your dry ingredients in a bowl and mix. preheat your oven to 230 C.
Cut or rub in the vegetable shortening with your fingers until it resembles breadcrumbs.
Pour in the milk a bit at a time until the breadcrumbs bind together to make a dough. Knead briefly for a minute to make sure it's well formed. Split the dough into two flat circles and cut each circle into quarters. Place on an oven tray and bake for 12-15 minutes.
Serve with butter and raspberry jam. We also had some whipped cream on ours.
These were pretty nice scones! Slightly different in texture to scones I'm used to. I liked how they rose really well and had a lovely flaky texture. They broke apart without needing a knife and were really soft to the bite. I can see why they're a very popular fair food :)
