USA: Minnesota - Tater Tot Hotdish

 


This recipe looks good but there's a big problem in that you can't buy Tater Tots in the UK. I'm going to make this recipe using some mini hash browns I've found which seem to be the next best thing. I like a simple casserole dish like this. JD and I are very much looking forward to eating it.

Ingredients:

  • 1 bag Tater Tots 
  • 500g minced beef
  • onion
  • 2 cups mixed vegetables 
  • 1 can cream of mushroom soup
  • ½ cup sour cream
  • ¼ cup milk
  • ¼ teaspoon garlic powder
  • 1 teaspoon mustard
  • salt & pepper 
  • 2 ½ cups grated cheddar cheese 

The first thing to do is to dice the onion and sauté it in some oil. As it starts to soften, add the minced beef and cook until browned.


Mix together the sour cream, milk, soup, garlic, salt, pepper, mustard and 1/2 cup cheese.


Add a cup each of frozen peas and frozen corn. Stir well.


When the beef is cooked add it to the bowl and stir in.


Tip into a greased oven dish.


Cover with Tater Tots (or mini hash browns if you're in the UK) and then sprinkle the rest of the cheese on top.


Cover with foil and bake in the oven at 200 C for 30 minutes. Remove the foil and bake for a further 20 minutes. 




It was really good. Tasty and comforting. We ate ours with a dollop of sour cream leftover from the recipe which went really well with the hash browns. It's such a simple dish to make but very satisfying. Well done, Minnesota!
