USA: Maine - Blueberry Cake

 


When I think of Maine I think of lobster. Mainly because of Cabot Cove and Jessica Fletcher solving a murder at the Lobster Festival they had yearly. Murder She Wrote and Stephen King novels are my main source of knowledge of Maine but I know they're big on lobster there. I've had difficulty buying lobster so I've had to delve deeper into Maine's food choices and I've come up with this Blueberry Cake. Blueberries are Maine's official state fruit so I think I'm ok with this recipe!


Ingredients:

1 1/2 cup flour

1 cup sugar

1 1/2 teaspoon baking powder

1/2 teaspoon salt

1 egg

1/2 cup milk

2 tablespoons apple sauce

1/2 teaspoon vanilla essence

1 cup blueberries


Sift the dry ingredients into a bowl.


Mix in the wet ingredients and give a good stir combining everything well.



Dust the blueberries with flour, apparently it stops them sinking.


Tip into the cake batter and stir in well. Then pour the batter into a greased cake tin. Bake for 40-50 minutes at 175 C.


When cooled, slice into squares, dust with icing sugar and eat with a dollop of whipped cream.



We all really enjoyed this cake. The addition of apple sauce made for a nicely moist texture inside with a crisper feel to the outside. The blueberries were lovely and sweet spreading their blue goodness throughout. The blueberries sank despite having dusted them in flour but a quick flip of the cake solved that problem. It was easy to make so it's definitely a recipe to keep. Yum!
