Ingredients:
32 oz grated potato
2 cups cream of chicken soup
2 cups grated cheese
2 cups sour cream
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup melted butter
1 cup breadcrumbs
First job is to grate a lot of potatoes. Brace yourself for arm ache!
When you've finished you can add the other ingredients to the bowl (if you still have fingers left!).Cover in foil and place in the oven. Cook for 40 minutes at 180C.
Take the foil off and cook for a further 5-7 minutes until the topping is starting to brown.

This dish was very different in texture to any potato dish I've had before. It was very creamy and had a nice flavour from the soup. The cheese made it very comforting to eat and I found myself having several large spoons of it. It's a little bland on it's own but I expect it'd be a great side dish to something spicy to counter the heat. It's an easy dish to make and we enjoyed it!
