USA: Utah - Funeral potatoes


Not a very cheery name for a dish but it apparently comes from the fact that this potato dish is often on the food table after a funeral in Utah. Seems a little morbid of a whole state to have this as it's favourite food but who am I to judge? Potatoes are great and I'm keen to try these as they're made in a way unusual to me!


Ingredients:

32 oz grated potato
2 cups cream of chicken soup
2 cups grated cheese
2 cups sour cream
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup melted butter
1 cup breadcrumbs

First job is to grate a lot of potatoes. Brace yourself for arm ache!
When you've finished you can add the other ingredients to the bowl (if you still have fingers left!).


Add the soup, cheese, sour cream, salt and pepper.


Give it a good mix and place it in a greased oven-proof dish. Mix together the melted butter and breadcrumbs then spread it over the top of the potatoes as a topping.
Cover in foil and place in the oven. Cook for 40 minutes at 180C.
Take the foil off and cook for a further 5-7 minutes until the topping is starting to brown.
This dish was very different in texture to any potato dish I've had before. It was very creamy and had a nice flavour from the soup. The cheese made it very comforting to eat and I found myself having several large spoons of it. It's a little bland on it's own but I expect it'd be a great side dish to something spicy to counter the heat. It's an easy dish to make and we enjoyed it!
