Ingredients:
For the filling:
8 peaches
1/4 cup brown sugar
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1 teaspoon lemon juice
2 teaspoon cornflour
For the topping:
1 cup flour
1/4 cup brown sugar
1 teaspoon baking powder
1/2 teaspoon salt
6 tablespoons butter
1/4 cup boiling water
Slice up the peaches thinly and put in a bowl with the sugar, cinnamon, nutmeg, lemon juice and cornflour.
Toss the mixture with your hands until everything is mixed and covering the peach slices
Put the peach slices in an oven-proof dish and cook for 10 minutes at 200C. Now to make the topping. Put the flour, sugar, baking powder and salt in a bowl. Stir and then add the butter.
Rub the butter into the dry ingredients with your fingers. Add the boiling water to turn the mixture into a dough.
Drop spoonfuls of the dough onto the peaches and then sprinkle with a combination of cinnamon and sugar.
Bake in the oven for a further 20-25 minutes until golden brown.
We had our peach cobbler with vanilla ice cream and it was delicious! The peaches were soft and covered in a warm sticky syrup which had soaked into the cobbler part. The topping was amazing, cinnamony and soft with a crumbly texture from the sugar on top. I really liked it. I quite fancy trying cherry cobbler now as I love cherries. I was suspicious of this dish but even the peaches were lovely in it. Give it a try yourself!
