Vietnam - Xa Xiu Chicken

In China this dish is called Char Sui and it's most often pork that is marinaded this way. In the ever optimistic life of a parent I've decided to make a chicken version to tempt my children into joining in with this meal. This Chinese food is very popular in Vietnam where it is eaten with sliced cucumber and boiled rice. We're going to have it in bread rolls with sliced cucumber.

Ingredients:

1 garlic clove, minced
1/4 teaspoon Chinese 5 spice
2 tablespoons honey
2 tablespoons hoisin sauce
1 1/2 tablespoons soy sauce
1 tablespoon tomato ketchup
2 teaspoon oil
1kg chicken


Combine all the ingredients in a bowl (not the chicken yet, silly :D).



And give them a good old whisk to make up the marinade.


Put the chicken in the bowl and rub all over with marinade.


Cover the bowl with clingfilm and pop it into the fridge for a couple of hours.


Cook the chicken on a barbecue or griddle pan for best results. You can also just grill or bake it.


I was really pleased with how the chicken looked, it had a nice dark pink colour from the marinade and was blackened from the griddle in nice lines. The texture was tender and it had a strong 5 spice flavour to it. We really enjoyed it in the sandwiches and there was some left for a salad the next day too. Result!
