Uruguay - Tortas Fritas

Today I made a fried bread recipe from Uruguay and upset the kids with the smell of melting lard around the house. Oops! In retrospect, it was way worth it.

In Uruguay it's traditional to eat them on a rainy afternoon which fits in perfectly with today's weather. It's not a coincidence because the last week has been too hot to attempt frying food.

Ingredients:
  • 2 1/4 cups flour
  • 3/4 teaspoon salt
  • 2 1/2 teaspoons baking powder
  • 2 tablespoons butter
  • 2 tablespoons lard
  • 1 cup milk
  • lard for frying (or oil if preferred)

First, put the flour, baking powder and salt in a bowl and give it a stir.


Next mix in the lard and butter by rubbing it with your fingers into the flour. When it resembles breadcrumbs in texture, it's done.


Next slowly add the milk, mixing as you go until a dough is formed.


Roll the dough using a floured rolling pin. Roll out the dough quite thinly, I did mine a little thick and the bread expands in the hot lard. Cut into 3 inch circles and make a small hole in the middle with your finger.


Another tip, make the hole quite wide as they close up a bit in the lard. Fry the bread for a couple of minutes on each side until browned. Then drain on kitchen paper.




Serve with a little sugar sprinkled on top or with a spoonful of jam (my choice).



Oh my gosh these were delicious! Served warm they were almost doughnut like in texture (but not just any doughnut, the kind of doughnut that's been slightly over-fried and has that crispy crunchy fried texture that melts in your mouth) and the jam was slightly melting on top of the warm bread. So good, heaven in a mouthful good. Rainy afternoons need never be sad again with Tortas Fritas to enjoy.
