Turkey - Turkish Bride Soup

The hearty soup a bride eats before her wedding day so she can make it through the day! I don't have anything as taxing as getting married going on but it looks delicious anyway so here we go :)

Ingredients:

1 onion
1 tablespoon tomato puree
2 tablespoons butter
1 teaspoon paprika
1/4 teaspoon cayenne
200g red lentils
200g bulgur wheat
3 cups vegetable stock
1 tablespoon lemon juice
1 tablespoon dried mint
salt & pepper


Melt the butter in a large pan and saute the chopped onion until it is softened.


Add the tomato puree, paprika and cayenne then cook for a further minute.


Make up the stock and add to the pan along with the red lentils and bulgur wheat. Cover and simmer for 30 minutes.


Season with salt, pepper, lemon juice and mint. Add some yoghurt to taste if that's your thing and serve!



JD and I thoroughly enjoyed this soup! Luckily, because it made tons of it. I made a third of the original recipe but it's still lots. The lentils and wheat really expand absorbing the liquid so I ended up adding twice as much as I stated above. The soup is really filling with a light feel from the lemon juice. Very nice!
