Switzerland - Soupe De Chalet

Imagine you've been skiing on the swiss alps all afternoon, what could be better when you get back to your chalet than a bowl of cheesy pasta goodness? Nothing, that's what! I haven't been skiing but I'm always up for some cheesy pasta goodness in a bowl :)

Ingredients:

3 potatoes (peeled and small diced)
handful of spinach
200ml cream
200g macaroni
1/2 teaspoon salt
200g gruyere
1 onion
1 can butterbeans
black pepper to serve


Start off buy chopping the onion an sauteing it in a pan until it's soft.  Add the diced potatoes and macaroni, cover with just enough boiling water and leave to simmer for around 15-20 minutes until the potatoes and pasta are cooked.


 Add the butter beans and cook for another couple of minutes.


Grate the gruyere cheese.


Now add the salt, gruyere, spinach and cream. Give it a good stir and continue to cook on a lower heat until the cheese has melted and the spinach has wilted. 


Serve with a liberal amount of black pepper.


Ooh I loved this dish. Very similar to macaroni cheese but with the added deliciousness of butter beans and spinach. The gruyere cheese is such a lovely taste on the pasta and the butter beans compliment it perfectly. The flecks of spinach look great in an otherwise plain coloured dish. Just the food you need after a day of being outside in the cold.
