Portugal - Caldo Verde

Happy New Year, food lovers! I'm back and ready to carry on working my way through the alphabet and around the world. There aren't many options for O so I've decided to skip on to P for Portugal.

Back in June 2011 I made my first food from Portugal, Francesinha. It was delicious and I'm keen to try some more Portuguese foods.

This soup looks great and it's made green with the addition of kale which is one of my favourite superfoods. Delicious and good for you, pretty great, right?


Ingredients:

1 onion
6-8 inches of chouriço
5 potatoes
1 chicken stock cube
3-4 garlic cloves
handful of kale
salt and pepper


Slice the chouriço into thin slices and saute it in a pan. Set aside for later. Try and fail not to pick at this delicious sausage as you continue to make the soup!




Chop up the onion and saute it in the oil from the chouriço. Dice up the potatoes while the onion is cooking. Also peel and chop the garlic. Just rough chopping is fine as the soup will be blended later.





When it's softened you can add the chopped garlic, diced potatoes, salt and pepper.


Stir well and then add the stock cube along with 4 cups of water.  Leave the soup to simmer for about 20 minutes or until the potato is soft.


Blend the soup until it is smooth, being careful to wait until it's cooled a bit to minimise burn risk. Chop the kale and slice it thinly.



Add the kale to the pot along with the reserved chouriço. 



Cook for a further few minutes to soften the kale and then serve.



This was a lovely warming soup. I loved the contrast in textures between the smooth soup, kale and
chouriço. It was nicely spicy due to plenty of black pepper and we both enjoyed it. Simple to prepare and makes for a filling lunch along with some bread to dip in the soup. Lovely!
