Cuba - Picadillo

Picadillo is a meat hash often used in tacos or wraps but can be served as a meal on it's own. Traditionally served with rice and black beans, so that's how we're going to have it.

Ingredients:

  • 2 tablespoons oil
  • 1 onion
  • 1 red pepper
  • 1 tablespoon tomato paste
  • 4 cloves garlic)
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • 2 bay leaves
  • 1/2 cup water
  • 1 1/2 pounds ground beef
  • 1 can tomatoes
  • 2 tablespoons Worcestershire sauce
  • 1/2 cup pimento stuffed olives
  • 2 tablespoons capers
  • 1 potato 
  • 1 teaspoon salt
  • 1 teaspoon pepper


Dice up the onion and pepper then saute it in the oil for a few minutes.


Add the tomato paste, garlic, oregano, salt, pepper, cumin and bay leaves. Stir as it cooks for about 2 minutes.


Add the water and stir well. Cook for a further 5 minutes to reduce the liquid. Add the mince and break up into chunks. Cook until no longer pink.


Now add the olives, capers, diced potato, tomatoes and Worcestershire sauce.


Cover and reduce the heat to medium. Cook for 10 minutes or until the potatoes are done.


Serve with boiled rice and black beans on the side.


We really enjoyed this dish. It tasted great and has lots of colour to it. I'm not the biggest fan of olives but I still loved it. It's a really hearty meal with the rice and beans. I bet it'd be great in tortilla wraps too! Yum :)
