The Seychelles are an island country in the Indian Ocean. I chose this banana fritter recipe because I wanted to do something sweet for a snack.
Ingredients:
6 bananas (cut in half)
1 1/2 cup flour
3 tablespoons sugar
1 teaspoon yeast
1 egg + 1 egg white
3 tablespoons oil
1 teaspoon vanilla extract
1/2 cup water
Salt
Juice of 1/2 lemon
Frying oil
Place all the ingredients in a bowl (except the bananas, egg white and frying oil).
Mix to make a thick batter.
Whisk the egg white until it forms soft peaks and then fold it into the batter. This will make the batter lighter.
Dip the bananas pieces in the batter and then drop into hot oil to fry. Remove, drain and sprinkle with a bit of sugar.
Erin doesn't like bananas so she didn't have any. JD tried one bite but wasn't keen. Me and Leigh enjoyed them. The batter had made a nice light coating on the bananas. It was lovely to taste the lemon juice with the banana. Very nice!
