The Vatican City is the smallest country by size and population with only 842 people living there. The dish I'm making was created for the Pope (Pope Pius XII) and is a richer version of carbonara.
Ingredients:
3 tablespoons butter
1 onion
150 grams pancetta
3 eggs
2 tablespoons double cream
1 1/2 cups parmesan cheese
1 package fettuccine noodles
Fresh cracked blacked pepper
Mix together the eggs, milk and parmesan. Set aside for later.
Cook the fettuccine in some boiling water until your preferred level of done-ness.
Saute the chopped onion in some butter.
Add the pancetta and continue to saute until it's done.
Drain the fettuccine and immediately stir in the parmesan mix. Stir it really well, which is tricky because while you've been doing everything else the parmesan cheese mix has almost solidified! The heat of the pasta soon makes it easier though. Next add the onion and pancetta and stir that in too.
Lastly grind plenty of black pepper all over your fettuccine.
This makes for a delicious but simply made meal. It tastes creamy, buttery and cheesy, all the best kinds of tastes really. It's very different from any other pasta sauce we've had and we enjoyed it immensely. Maybe we should find out what else the Pope eats!
The current Pope (Pope Francis) is known for his humility so we didn't fancy adapting this dish to suit his more basic tastes. :D
