Equatorial Guinea is a small country in Central Africa. Just 11,000 square miles in size. It's national anthem translates as 'Let us walk the paths of our immense happiness', how awesome :)
I picked this dish because I was looking for something sweet to eat after pizza for our weekly film night. This dish is usually eaten for breakfast in Equatorial Guinea though.
Ingredients:
4 bananas
1 cup coconut
1/2 cup orange juice
1/4 cup brown sugar
3 tablespoons butter
2 lemons
Cinnamon
Honey (I used Golden Syrup instead)
Chop the bananas into thick slices and place in a baking dish. Melt the butter and pour it over.
Pour over the orange juice and squeeze the lemons over too. Sprinkle with cinnamon and then brown sugar.
Finish off with a sprinkling of coconut and then bake in the oven for 10 minutes at 200C.
Grill until the coconut has browned on top. About 2 minutes.
I enjoyed the taste of orange and lemon juice with the banana which is something I haven't tasted before. Leigh really liked it all especially the brown sugar which she stole a teaspoon of to eat. JD said it wasn't too terrible which is fine praise coming from someone who doesn't like bananas. Erin didn't want to try it. 3 out of 4 ain't bad! It seems like it'd make a nice quick, sweet breakfast to have if you like bananas. Toasted coconut is a lovely smell and flavour along with the crunch of the brown sugar. The bananas weren't cooked too much so they didn't go soft and soggy. Overall a nice sweet dish which was simple to make.
