Central African Republic - Benne Wafers


Benne is the Bantu word for sesame so that's how these cookies get their name. They're popular in the south of America because the recipe was brought over there from Africa by the slaves working there.

Ingredients:

1 cup sesame seeds
¾ cup butter, melted
1 ½ cups brown sugar
1 egg
1 tsp vanilla
1 cup flour
¼ tsp salt
¼ tsp baking powder

This recipe makes 35 cookies so I halved it.


Melt the butter and mix it with the sugar. Add in the egg and vanilla essence.


Add the flour, sesame seeds, salt and baking powder.


Mix well.


 Spread out some mixture in a thin circle on greaseproof paper. Bake in an oven at 190C for 4-6 minutes.



 We had ours with some ice cream.


These cookies had a very different taste. They weren't too sweet but had a nice nutty flavour. The texture was the best part with the sesame seeds making them kind of grainy. Mine didn't go very crisp or brittle even though I tried to make them thin. They were soft and bendy instead. They were good either way and everyone enjoyed them.
