Slovenia - Nadevana Paprika

Slovenian dishes traditionally include a lot of meat, are high in calories and are nearly always cooked in fat. I found this recipe and knew it was the one I wanted to try, I've only ever had peppers stuffed with rice and vegetables, so this one with meat involved was definitely for me!


Ingredients:

* 2 red peppers
* 500g ground beef
* 1 onion, chopped
* 2 tablespoons oil
* 1 cup rice, cooked
* salt and pepper to taste
* 1 cup pureed tomatoes
* 3 cups beef stock

Remove the stalk from the red peppers and scoop out all the seeds.



Boil them in salted water for 10 minutes, drain and dry them with kitchen paper and set aside.

In a pan, heat the oil and add the chopped onion and rice. When they are softened, add the beef and cook until it's browned. Add half of the pureed tomatoes and salt/pepper to taste.

Spoon the beef mixture into the hollowed out peppers.



Place the peppers in an ovenproof dish and pour over the rest of the pureed tomatoes. Add the beef stock, cover and put in the oven on Gas Mark 4 for 30 minutes.



It was pretty good, the pepper was soft but held together well enough to present it nicely. The stock liquid tasted really delicious, almost like a soup in fact. It felt like a really comforting winter warming dish.
