Kyrgyzstan - Kuurdak

Kyrgyzstan is a landlocked country in Central Asia. I've chosen this meat stew to make today which was traditionally made with organ meat cut into chunks. I went for beef instead, hah!

Ingredients:

1lb beef
1 onion
1/4 cabbage
1 green pepper
Oil
1/2 teaspoon black pepper
1/2 teaspoon salt
1/2 teaspoon paprika
2 bay leaves
2 tablespoons tomato puree
1 cup water


Brown the beef in 2 tablespoons of oil.


 Slice up the onion, green pepper and cabbage.


When the meat is done add all the other ingredients to the pan.


Partly cover with a lid and simmer for about 30-40 minutes until all the vegetables are soft and most of the liquid is absorbed.  At the end we added a bit of cornflour to thicken up the liquid.


This one is a winner. So easy to make in just one pan and you can wander off while it simmers then come back to some delicious food to eat. JD and I loved it. It made a really nice sauce which was spicy but only subtly so. We ate the lot then mopped up the sauce with bread. Fantastic!     1. Hi! About 10-15 minutes to chop the veg and then 45-60 minutes total cooking time. :)

    2. Hi, we served this for 2 of us and had seconds but you could serve four people with it if you added some bread to the meal for dipping. Hope you enjoy it :)
